Beauraing rolls: a recipe created by the chef of the Brasserie du Biran

This recipe is made from regional products such as Ardenne salt meats.

The rolls of Beauraing, creation of the “Brasserie du Biran”

Recipe:


Ingredients (for 4 people):

  • 400g grated hard cheese
  • 600g puff pastry
  • 8 slices of Ardenne sausage
  • 4 slices of Ardenne ham
  • 10 slices of smoked bacon, finely chopped
  • 6 mushrooms, chopped
  • 1 onion, chopped
  • 2 tomatoes, thinly sliced

    + baking paper

Preparation:

  1. Flatten the puff pastry quite thinly. Spread ham, sausage, bacon, tomatoes, mushrooms and onions.
  2. Sprinkle the cheese over the preparation. Roll up like a sausage.
  3. Cut into two-centimetre slices and place on baking paper on a baking tray.
  4. Bake for ten minutes at 200°C.
  5. Serve with a mixed salad with dressing and a good regional beer (f.e.:Tournée Beaurinoise).

This dish is on the menu of the restaurant-brasserie Le Biran (either as a starter or as a main course).
